I made this for Sunday treats and it was a success!

Strawberry Dream Tart

1  8 oz package cream cheese, softened
1  14 oz can sweetened condensed milk
1  5.1 oz package vanilla instant pudding mix
1/2 cup water
1  8 oz container frozen whipped topping, thawed
Brown sugar crust
1 quart fresh strawberries, sliced

Brown Sugar Crust
4 cups corn flakes
3/4 cup butter
1/4 cup firmly packed brown sugar
2 egg yolks
1/4 tsp salt
1/4 tsp almond extract
1 1/3 cups flour

Step One - Make Crust

Crush cornflakes;  set aside.  Beat butter and brown sugar at medium speed until fluffy;  add egg yolks, salt, and almond extract, beating until smooth.  Gradually add flour and cereal.  Shape mixture into a ball; press into a well buttered, 12 inch pizza pan.  Bake at 375 degrees for 10 - 12 minutes or until golden.  Cool completely.

Step Two:  Make filling
Beat cream cheese at medium speed with an electric mixer until smooth.  Add next three ingredients; beat until smooth.  Chill five minutes; fold in whipped topping.  Spread filling over crust.

Step Three:  Arrange strawberries over filling.  Chill for at least 30 minutes before slicing.

Good Eats

Cilantro Lime Chicken Nachos...It's what's for dinner!
I found a recipe on Aunt Jan's blog for cilantro lime chicken (Thanks Jan!) and and we decided to try it and put it on nachos (on the lime chips of course) with some home made fresh tomato salsa...yummm!  Here's the chicken recipe link:   http://momtobler.blogspot.com/2010/02/cilantro-lime-chicken.html

Also made some crab pasta salad this week that was so good.  Now that it's hot, it feels good to just have salads for dinner.  And today I am making a strawberry tart for our "Treats on the Lawn" family get together.....another recipe I found online.  If it's a hit, I'll post the link.

Budding Artist?

My darling 3 year old Leia drew this picture yesterday.  Aren't you just drawn in by those swirling eyes?  It just makes me laugh when I see it.  I saw her at the kitchen desk with a big pile of white computer paper that she was not supposed to get and the markers and was about to put an end to this when I discovered that she was being very productive with this fabulous drawing!  Wow, she is really coming along in her drawing skills.  It's a keeper.

Cards

Made more cards....just because.   And these last ones are my teacher appreciation gifts that I made last night.  Today was the last day of school.  I can't believe that school is out already!  Kids were only in school this morning for an hour and a half but I took advantage of that time and met my husband for a date at Kneader's for a fabulous french toast breakfast.  Their french toast is to dye for!  Mmmm Mmmm, my favorite!  We made that my birthday date since my b-day is tomorrow.  :)

Best Saying

"Live, Laugh, Love" is good but I love this quote.  Some days this is what I need.  I think I will make something for my home with this saying on it.
